Realistic RV Kitchen Instant Pot Recipe
Mississippi Chicken
Ingredients:
- 2-4 boneless skinless chicken breasts
- 1 cup chicken broth or water
- ½ stick of butter
- ½ jar pepperoncini juice & 2-3 whole pepperoncinis
- 1 Ranch seasoning packet
- 1 tsp cajun seasoning (or a season all of your choice)
- 1 tsp garlic powder
- 1 tsp onion powder
- Half of a bottle of Olive Garden Italian salad dressing
Directions:
Place all ingredients into an Instant Pot and pressure cook on high for 25 minutes. Quick release pressure then shred chicken. Serve over rice.
*An Instant Pot makes the best rice. I will put my Mississippi Chicken in a separate bowl with a lid to keep it warm and then use the Instant Pot to make the rice. For rice, use equal parts rice and water then pressure cook on high for 12 minutes. Quick release then fluff with a fork*
