RV Recipe: Guacamole on a Hole-y Roll-y

Have you ever been stumped on what to have for lunch but you're so 'meh' on slapping a few slices of ham or turkey and cheese between two slices of bread with a little spread and call it a meal? That was us just the other day. It was cold outside and I wanted to make something hearty yet healthy for lunch. I didn't want to chow on 'usual or boring'.

As I sat at Liberty's dining table, my growling stomach was distracting me from writing a blog article. In my usual 'looking around and thinking of words to type', my eyes locked on two ripe avocados sitting on the counter. It was a few short minutes after noon time; Captain Dan was outside doing...hmmm…what the Captain always does…putters.

Well, anyways, I then got up and fumbled through our fridge and started pulling things out for the sake of pulling them out. I was thinking about how I could pull something magical off like the Pioneer Woman or the Sandwich King; two of my favorites on Food Network. Soon, the counter next to the fridge had an array of things that I just stared at. "Okay", I thought "I can DO THIS!"

And then 10 minutes later…..

….BAM!!! Oh wait, did I just do an Emeril?

It looks wonderful, doesn't it? Like it should be on Food Network or something? Okay, perhaps I'm getting a big head so I'll just quit while I'm ahead. I guess I should share my recipe though, no? Let's start with the shopping list:


2 Large Ripe Avocados

1 packet of Guacamole Mix

About 12 Grape Tomatoes - Washed

1 Tablespoon Dried Onion

½ Cup Shredded Cheddar Cheese

2 teaspoons Lemon Juice

Fresh Ground Pepper

2 'Everything' Bagels (high fiber)

OPTIONAL: 2-3 drops Young Living Lime Vitality Essential Oil


Slice bagels in half and toast lightly; spread Guacamole Salad as thick as you'd like. Its healthy so don't worry about indulging. Serve with low-fat Blue Corn Nacho Chips and fresh brewed unsweetened ice tea. Once you take your first bite, a plethora of flavors will sort each other out. The smooth buttery-ness of the avocado with hints of lemon and lime mesh with the acidity of the tomatoes, onions and black pepper. Soon after you finish your first bite, you palette will be begging for another. You will no doubt, have enough left to make another sammich but go ahead, now you can grab that spoon!
