RV Recipe: Honey Chicken Kebabs

This is my favorite kebab recipe, and I often omit the veggies all together. I like to serve it with rice, corn on the cob, and a cool cucumber salad…makes for a great summer meal!


 2 tsp vegetable oil
2 3/4; tsp honey
2 3/4; tsp soy sauce
1/8 tsp black pepper
1 clove garlic
2 boneless skinless chicken breasts, cut into bite size cubes
1 small onion, cut into bit size pieces
Red or green pepper (or both), cut into bite size pieces
Kebab skewers


In a bowl, whisk together oil, honey, soy sauce, and pepper. Place the chicken (and veggies, if you like) into the liquid mixture and marinate at least 2 hours, the longer the better.

Preheat grill to high.

Drain chicken (and veggies) from marinade and discard marinade. Thread the chicken and veggies alternately onto skewers.

Lightly oil grill grate. Place skewers on grill and cook for 12 to 15 minutes (turning occasionally, until juices run clear.)

My husband, Michael, and I have been living fulltime in our 2011 Landmark Key Largo since April of 2011 and LOVE every minute of it. 

When Michael retired from the US Army in October of 2012 (after 29 years of service) we hit the road and haven’t looked back.
