With the Heartland RV North American Rally quickly approaching I wanted to share a recipe for Amish Haystacks. We were served this dish in 2015 when we had dinner at an Amish home during the pre-rally festivities.
It's much like a taco salad with a few twists that make it unique. It's a great dish to prepare for a crowd or for a 'bring an ingredient' party where each guest/couple brings one item to contribute to the meal.
Diced green pepper
Sunflower seeds (shelled)
Chopped olives (green or black, your preference)
Cheese sauce (I used a powdered cheese sauce I purchased at an Amish bulk food store but you could use any kind of cheese sauce)
**Amounts will be determined by how many people you plan on serving. For 5 people I browned roughly 2 pounds of ground beef and had plenty left over for another meal.
Pass ingredients around and have everyone 'pile' onto the center of their plate in the order listed above. Keep in mind that you will have a fairly large 'mound' by the time you are finished.
