RV Recipe: Amish Haystacks

With the Heartland RV North American Rally quickly approaching I wanted to share a recipe for Amish Haystacks. We were served this dish in 2015 when we had dinner at an Amish home during the pre-rally festivities.

It's much like a taco salad with a few twists that make it unique.It's a great dish to prepare for a crowd or for a 'bring an ingredient' party where each guest/couple brings one item to contribute to the meal.


Crushed saltines
Shredded lettuce
Taco meat
Diced green pepper
Diced onions
Diced tomatoes
Sunflower seeds (shelled)
Chopped olives (green or black, your preference)
Crushed Doritos
Cheese sauce (I used a powdered cheese sauce I purchased at an Amish bulk food store but you could use any kind of cheese sauce)

**Amounts will be determined by how many people you plan on serving. For 5 people I browned roughly 2 pounds of ground beef and had plenty left over for another meal.


Pass ingredients around and have everyone 'pile' onto the center of their plate in the order listed above. Keep in mind that you will have a fairly large 'mound' by the time you are finished.

My husband, Michael, and I have been living fulltime in our 2011 Landmark Key Largo since April of 2011 and LOVE every minute of it. 

When Michael retired from the US Army in October of 2012 (after 29 years of service) we hit the road and haven’t looked back.
